Could anyone suggest a decent, cheap windows operating laptop to exclusively use for Save Editors like PKHex,Homebrew Apps and switch firmware updates?

I have a macbook and it doesn't allow me to update my SXOS Switch firmware or use a lot of save editors, even when using WINE.

Need something with an SD card slot ideally

Look into bookcamp it let's you dual boot mac os and windows on your mac although I'm not a mac person so I don't know anything about it or look for a cheap laptop on ebay, I bought a £200 laptop with an i3 6100u a couple of years ago and it works great

All Im gonna use it for is PKhex, some other save editors and transferring the new firmware files over to Switch SD card.

Your issue isn't really anything to do with hardware. You should be fine for all of those programs if you just use Windows 10 on any machine
Also put the file in a rar then transfer then unrar from card copy
