But then they won't be legit as I've changed their stats to random EV IV ... but I caught a meltan in pokemon go so I guess I will grind for its evolution

You can't hack Pokémon GO the way that you think. It's a mobile game that's completely server based. Everything you do is always synced to the servers.

Do you mean GO or Let's Go?
You can restore a savegame to Let's Go in CFW and it's still there in OFW obviously as savegames are stored on sysnand (unless we're speaking about emunand).
What happens to it (or you) if you go online with it on OFW is another cup of tea.

Yes i mean in Go and OFW mode. But probably is not possibile, in OFW mode works everything correctly, but i've never use the Switch online, i think i'm banned.... LOL

Will he get banned ? Another way catch pokemon with normal switch send to hacked switch to boost candys etc. send back original switch ? Make simple trade pokemon cfw / ofw is it risky ?

Honestly, the best way in a case like this is to make a 6IV Ditto and just breed the pokemon you want. If I'm not misstaken, the new Pokemon will be legit. Yes, its a lot more effort, but rather that than fully banned tbh.

To get it on your switch, you need to extract your save with a save editor on you Switch, load the save in pkhex, make the pokemon, update the save and then put it back in the SD and load the save in the save editor. There should be no issues if it's an actual legit Pokemon. I used PKHex a lot on my 3DS and never had issues online.

If you set it to: Met in (Your Game) at LvL 1 at Pokeball Plus in a Pokeball, tick Fateful Encounter, set level to 100, set nature to timid, set it's moves to moves it can actually learn and you'll be fine.

Well yes, if you install homebrew on your switch, expect to get banned.
