Hacking Revert to game version 1.0 without mandatory update?

I wanted to do 2 Player local multiplayer in Mario Kart 8 Deluxe using my up-to-date Switch, and my <3.0 switch I bought.
I assume that different versions of the game aren't compatible (1.2.1 and 1.0), so I figured that I'd just delete my game data and play on a different account for a fresh 1.0 save (since my 1.2.1 save wouldn't work with 1.0)

To my dismay, it demands an update to run the game. And so I wiped all save data for the game thinking that was the issue, and it still refuses to boot.
And so on top of deleting all game data, and deleting all save data, I disabled my internet connection and went so far as to boot in safe mode and reinitialize the console without deleting save data.
And it STILL refuses to let me play it without updating.

Unlike games that have never been updated that give the option to Start Software, or Update first, it says that it has to update before I can play it at all.
Is it impossible to revert to v1.0 of a game without formatting the entire Switch (and losing all save data in the process)?

there's nothing you can really do. the game can't be started without the game update, since it was previously installed.

The system actually stores the fact that you've had the update even if you delete all data related to the game??

I'd think formatting the entire system would do the trick (I pray)? If the Direct tomorrow announces Save Data backups then I'll be able to format at that point.

you had a game update installed, now you can't play it without that. Wii U did that too. I don't know if a full format would remove it but I wouldn't bet on it.

i doubt a format would do a thing. nintendo is actually doing this thing called "learning from their previous mistakes" this time around
