The version of Switch OC Suite I'm running allows the maximum settings of 1963MHz CPU, 998 MHz GPU and 1996MHz RAM which is the maximum I've tried on my OLED Switch both in docked mode and in handheld mode with the official charger plugged in. Have you tried going over these settings before? Did you experience any harmful side-effects? To my understanding if you overclock the CPU or GPU above these frequencies you risk killing the Switch with excessive power draw and if you overclock the RAM above this you risk corrupting your SD card.
