Does it restore just the System files?
Or all the Channels, save data, ect. on the Wii?

Quick Questions : What Backuplaucner can load IOS's to choose? (trying to get GH:5) working. =P

it will restore any block of data on your Wii that does not match your NAND backup. so everything you have changed since the backup will be restored to when you performed the backup.

try Neogamma
 
So even the saves and stuff will recover right?
And Neogamma doesn't have the option to choose IOS I think...

It will restore everything except of the "first" few blocks (that is where boot1 and boot2 are so these will never touched)

Yes, if you have bootmii installed as boot2 you can use betwiin and convert a NAND.
