I'm on 5.2, and from what I understand that's what SSB4 comes with. I've had my connection settings deleted for a while and just turned them back on. Now, I get a prompt on the Wii U menu to update when starting the game.

If I agree to update will it just see I have the correct firmware and not do anything, or will it take me to 5.3?

You will be updated to 5.3.

Interesting I updated to 5.2 offline with smash, but when I ran MK8 it did a 1 minute system update as well. I think the same happened with Hyrule Warriors. All offline.

Thanks for the reply. I guess I'll wait and see if you can emulate the latest NAND and go online safely after the kernel exploit is released. If not, I'll just update.

If you delete your network settings again, you can play Smash just fine. The update notification will just try to connect to Nintendo Network for a bit before failing, and then you can use it as you please. If you /did/ click update while it's connected, it would download the latest version.
