So I have a wii u modded with aroma and I can't remember my nintendo network ID for pretendo so I'm wondering is there any way to get that recovered and if not is it safe to add another user without risking bricking with aroma.

Just create Pretendo ID on Pretendo web site, and use it to add account to Wii U (like standard Nintendo account, just provide Pretendo ID and password)

You do need to be connected to Pretendo network

If you forgot PNID, try "I forgot my password" on Pretendo webpage and provide email you used to register
