Now that Atmosphere supports 6.2, will updating from 6.1 with ChoirNX burn fuses? Also, if I do the update with Choir, have autoRCM on, then boot stock from Hekate, does that burn fuses? Because I heard that there was another software fuse check included with 6.2, which was why a fuseless update wasn't possible before a CFW supported it.
 
No both doesn‘t burn fuses if you only start into CFW as far as i know (only used Choidujournx in the past. If you ever boot to OFW they get burned instantly so it‘s better to run autoRCM so that can‘t happen.

But if i were you i would update via ChoidujourSX so you don‘t have to use memloader etc.
But it‘s totally up to you which way you prefere.

At the moment if you burned too many fuses and the firmware you installed doesnt match the fuse count then the console will crash. This is a problem for downgrading or people who accidently updated and need to downgrade to get cfw working again.

There are unreleased exploits that work on lower firmwares such as the warmboot Deja Vu. There may also come a time when "better" exploits come out such as the coveted untethered coldboot.

Many instances where it's beneficial.

-You can backup the original state of your switch before you do any CFW anything, and later restore it to the older firmware with no chance of ban when you do go online (provided you stayed offline the whole time and backed up the proper way). This is my current usage.
-In the future, may be beneficial to have access to older firmware, which may have security holes that can be exploited for more secure CFW or something (ninjaed)
-Gives you more control over your switch

that's off the top of my head, anyway.
