I've recently been designing stuff in Unity engine to get practice in programming and game design. I'd like to extract some animation files from Resident Evil Umbrulla Chronicles and RE4. What program could I use to extract the animation files? I've seen programs that can extract models and textures, but are there any that can extract the files for animations?

What you can try is searching on internet for them. For example, if you want the animation files for SSBB intro, you could try a search like 'Super smash bros. Brawl intro animation files.' I know that is maybe not what you're searching for... but it's something.
