As far as I know that is not possible. Even if I block the updates in my router (so it does not know that there is a new update) it blocks access.

That would likely require firmware spoofing as it is checked remotely. It doesn't matter if your Switch doesn't know what the current system version is. Nintendo knows. They always know. Watching... waiting... judging.
