Personally, I just can't see the appeal; between the lack of direction given to the player due to lacking map markers, combat being awkward and hindered by extreme weapon/shield fragility, new equipment feeling worthless because I know it'll all break real quick, the mediocre dungeon replacements, limited stamina...

...being unable to max out both Hearts and stamina, Eventide Isle and the Master Sword trials having bullshit restrictions (withholding all your stuff, leaving you naked and powerless), the goddamn misandristic Gerudo Town, the complete non-appearance of Zelda outside of flashback cutscenes and ending, how visually ugly the game is (it's no The Wind Waker)...

I just could never find enjoyment in it, and I have finished it - with the use of an online map to actually FIND stuff instead of stumbling around lost, bored and frustrated, and using an infinite stamina cheat to remove that artificial limitation. Ghost of Tsushima is so much better, and more fun.

The reasons you listed are mostly the reasons why I like it lmao. Having little to no map markers leaves a pretty clean map and not cluttered map and I personally prefer that over one with a ton of icons. I love how Sheikah Towers only gave you a map and you still have to manually look out for points of interest.

I also loved the durability aspect of the game and I think that made combat all the more fun. The Master Sword trials I do agree with, having it behind DLC kinda sucks imo and Gerudo Town, well, I expected I'd be able to finally enter the place once I beat Vah Naboris and I even completed all the side quests in Gerudo Town after that but nope. It sucks but it isn't honestly a deal breaker to me.

I do find that Zelda's appearance in the ending makes it so much more impactful since it is the only time you do get to see her at all in a non-flashback scene. Visually, I find no problems with how the game looks. Hell, I love it. I think that the art style will age quite well.

I personally enjoy the exploration in this game and I love checking every single nook and cranny. I think this Hyrule is pretty well-designed and I have no problems sinking my free time into it. I guess it isn't for everyone but I sure do like it and I'll probably even buy the DLC sometime soon once I 100% the base game.
