Sorry to bump this thread but, has anyone found a way to do this? I have a similar use case as OP.
Extract all parts of you file (use NX FileViewer on PC or NXDumpTool on Switch): exefs, romfs, control
Use hacbrew to build it together changing whatever you want: name, titleid, author, icon (the images are in control folder named as .dat files but they are .jpg 256x256 renamed), etc.
