As far as i know the play disk is just the licence to play the game, and the data is purely installable data, The licence is probably less than 10 MB, hell i dare to say its size is 124 kilobits, Perfectly fitable along the installable data, So what is the purpose of having 2 disks?

Disc one is data and license. Disc two is data only.
Yes, useful for offline installation, but if connected to the PSN the Play Disc is enough as it'll download the data + updates automatically.

I just don't like the official version that much, a bit too much ads everywhere and not enough liberty like we have with a CFW/HEN.

Lets say that a PS5 game takes up 130GB.
The PS5 maxes out at 100GB for its physical media, so the publisher has two options. A, either release the game with 100GB on the disc, and the rest as a download (so what Microsoft does). The other option is to split the game data onto two discs, which can perfectly fit onto the other option of 2 66GB Blu rays. Effectively the idea is to have the game entirely printed on media as opposed to having a very incomplete version and reliant on servers for it to work.

What games are two disks? I know Metal Gear Solid collection came on two disks. But one of the was Metal Gear Solid 4, and the other was all the other games. So I don't feel like the good old days playing Wolfenstein on xbox 360

RDR2 and GT7, seen them myself.

If you're connected to the PSN Network you can simply use the Play Disc and download everything at once.

I remember ps3 never had any multi disk games, except for MGS collection that I can think of at least.
But I think this was more important then. Sure games was smaller, but also I think this was a major selling point vs the Xbox 360. I find it charming to change disk as the game progress, but boy does it suck to lose or scratch a disk so you can't progress.
Today I dont think people find it as anying, especially since you install the game to hdd. And thay can save a few buck using single layer BD

L.A. Noire came on two discs, no wait... That was the Xbox 360.

PS3 had very very few 2 disc releases.

LS Noire had 3 disks actually. I don't think ps3 had any multi disk games. Just a very few collections or bonus disks. Never a swap disk to continue or to install sort of thing. As mentioned I think Sony saw this as a selling point vs 360
