Im still buying an OLED Switch with hwfly modchip.
The seller says that I can’t have acces to sysNAND, only emunand, is that true? And why?

Probably to provide you with a basic setup that won't get your shiny new OLED banned. You can use CFW on your sysnand, but if you install any .nsp you'll get banned.
With a properly configured emunand that does not connect to Nintendo that will let you do whatever you want without getting your OLED banned.
Most people have it setup for their sysnand to be OFW only for online or just not getting banned & anything homebrew related or installing games is only done on your emunand.
You should be safe booting into syscfw, but make sure you know what you can & can't do. Running checkpoint to dump a save is safe, but installing any .nsp will get your Switch banned.
