Try on the first boot up to press your button you configured for homebrew launcher, it might of been a, that should take you back into your homebrew menu, then make sure you have the correct config file txt in your haxchi folder on the route of your sd card ie default=fw.img also with cfw- coldboot fw.img. Then go to your homebrew menu on boot up by holding a then click on cfw booter that should load up your cfw, then go back into your homebrew menu and load haxchi and run the coldboot again, it should say coldboot has been done already but it will load the correct config.txt then reboot, it should then double back into coldboot fw.img correctly without the loop.
Edit: take your coldboothax.install file out of haxchi folder on the route of your sd card, it should then just load your correct config.txt file in cfw.

do you know your config file content?
it should let you launch a homebrew instead of sysNAND CFW by pressing a button.
You could for example launch the homebrew launcher. (press "a" button ?)
from here you could use Dimok custom firmware patcher (it doesn't have a name yet) to reboot in sysNAND with additional patches, it will of course re-launch haxchi but this time once you load homebrew launcher you should be able to launch ftpii everywhere.
using a FTP client you browse to your coldboot file (the xml ?) and restore the original file you backup'd (you did, right? if not, someone should have a copy).
That's only one idea, I didn't test it, and I'm not sure it will work. just something I just thought based on the knowledge I have after reading existing threads.
someone else should confirm before you try it !

the issue is not haxchi (reinstalling haxchi will still reboot-loop, except if you don't load sysNAND by default but then exiting to home menu will just re-loop)
Or maybe there's a new coldboot method? maybe I missed some recent progress

I see there's a new "cfw-coldboot" fw.img creation mode, so I'm outdated. Don't follow my advices, they weren't meant for that method. I'll have to learn more about it.

it seems I was right, using ftpii_everywhere is the way to uninstall haxchi coldboot for the moment. but if you were using "cfw-coldboot" fw.img, you already have the proper patches and don't need to reboot to dimok's sig path firmware, you are already using a compatible one! just boot to homebrew launcher by pressing "a" and launch ftpii everywhere.
there's a backup of the original system.xml on NAND:

Did it go back into cfw when you clicked on cfw-booter in homebrew launcher after pressing a on boot up?

I install coldboothax with haxchi-coldboot
i have fw.img with dimoks content
Turn on your wiiu and hold the button down that you configured to load the homebrew launcher, it could of been button "a" as standard this should take you into the homebrew menu, just keep holding it down.
Edit: Did you create Dimoks cfw -coldboot fw.img? not cfw or rednand img. In CMD did you type make cfw -coldboot. If you did not create that img and put it on your sd card and now try?

It should go into the homebrew menu then click on cfw-booter then it should load the cfw coldboot ISOUHAX Splash, you might have to do it twice, the first time it might take you back into the homebrew launcher, just click on cfw booter again.
If you get this far make sure in your config file you have this line:- default=fw.img and this line:-a=wiiu/apps/homebrew_launcher/homebrew_launcher.elf, run it again through Haxchi in cfw and reboot.
