Titanium Backup will backup almost everything on your phone but it's a little iffy for your Text Messages and System Settings. The paid version has an XML export which is supposed to work between different ROMs better but it's still not perfect.

As for your contacts the answer's simple: Make them all Google Contacts. Then they'll be backed up automatically and restored automatically when you sign in with your Google Account.

Do you need Pro version of Titanium Backup to be able to remove those preinstalled apps? Because in the free version I don't really see the option to do this.

You should be able to remove apps with the free version. Just find the apps you don't want in the list (if they're not there, hit the "edit filters" button and make sure that "system apps" are set to be displayed), tap them and you should get a bunch of options, including uninstall.

As for making contacts into Google Contacts; I think once you install CM and restore your backed up contacts (which I'm assuming you've already done), they should be automatically made into Google Contacts. Pretty sure that's what happened when I switched to CM. Before that, I had tried changing my contacts to Google ones, but couldn't find any way to do so in my stock ROM (my phone is HTC though, so maybe Samsung does give you the option?) Anyway, it should probably be irrelevant now as they should hopefully have become Google Contacts automagically. If you open a few contacts, it should display somewhere on screen what "type" of contact they are (phone or Google).

Some phones are capable of dual booting (including the Galaxy S Plus, the incrementally improved version of your phone), but it is a phone-specific thing and I don't think anyone has created a dual boot solution for the regular Galaxy S. Anyway, even with the dual boot functionality, you can only flash ROMs created for your phone, so unless there is a Windows 8 port for your phone (which I'm fairly sure there isn't), your only real options would be two different Android ROMs (useful for perhaps comparing two ROMs, or having a more up-to-date but less stable ROM [e.g. for testing] as well as an older but more stable ROM).

You can remove preinstalled apps yourself with ADB. Just plug your phone into your PC via USB, open a root shell into the device, remount your /system (or sys?) partition as R/W, and then navigate to /system(sys)/apps and remove and .apk files you don't need.

Obviously, backup first. CM comes with tons of shit that is either useless to most people, or too buggy to use. Removing them will vastly improve your boot times and help with battery life.

I'll look into this this week. That's really my biggest gripe with Android, a lot of clogging apps that I really don't use and I don't know where they come from. And they are SO hard to remove, not userfriendly at all. When I format my phone and put a new OS on it, I want to know exactly what each app does, if it's necessary, ....

I guess ADB is this? Is that a solid guide to follow? I'd like Apollo to go, I've replaced it with another mediaplayer, one that has folder playback (because for some reason, Apollo didn't have that).

I would recommend using Titanium Backup to uninstall the apps first, (after you back them up, of course) before going straight to ADB. It's sort of unnecessary if you can just use an app to do it quickly. Some root file explorers can be used to delete apps, too, so you could always try that as well. ES File Explorer is one of the best one's IMO.
