My Wii U broke recently, the power pin broke off from the motherboard and no longer accepts power from the power plug. I know how to open and re-solder the power pins, but I have no idea how to test if it's working without re-assembling half the console. Does anyone have any helpful tips, like any test points I can try with a continuity tester to see if my solder joint works?

(I really don't want to spend $100 to send this in to nintendo...)

If you create a solid joint that does not appear to be "cold" than you will be fine unless traces were damaged.
you can plug the power in and test the solder joints directly for the power connector to see if you can read any voltage beween them. this should not require reassembling the console.
