I know the game hasn't been dumped yet (at least not publicly), but we know for sure that people with private exploits could do it (and they have done it in the past).

But if we get a public dump of the game one day, would it be possible to use some of the files from the leaked and decrypted ff7 demo pkg to get the full game to run on 5.05?

No. It is simply not that easy

It all depends on the SDK used to produce the title, I suppose the demo is probably using a game engine not so different from the retail version so, again in my opinion, using the Mythbuster's scale I would say it's plausible.

Having wrote that, the guy that modified the leaked demo is probably more qualified than I to give a more substantial answer... ^__^

and you would still need the encryption key from the retail version.

That's why @Madikan wrote about a public dump (from a higher FW), something we had some clues that's happened before.
