It's possible use the touch screen as zapper for games like duck hunt?

Yes, there is an option to use the touchscreen in the configuration of the core.

My question is, how can I play Duck Hunt using the joycons, or connecting a mouse in the switch. Anybody knows?

Why the hell would you want to connect a mouse to play duck hunt?

Yeah, touch screen works (set port 2 to zapper), pretty sure you can hook up a mouse for stuff like Area 51. Touchscreen works there, but like a trackpad instead of direct touch. SuperScope works as direct touch also on SNES.
Really wish there was gyro mouse control in RetroArch... I dunno, light gun games sort of fascinate me since they're so difficult to preserve. I'd kill for a EmuVR type setup for LaboVR...
