I don’t have a USB-C to USB-A cable yet so I can’t try it, but if I would turn off my switch with the battery 100% charged, boot into linux and plug the charger into the switch and keep it plugged in until I stop using linux, would I have the problem with the switch OS not seeing the battery level correctly that some users are experiencing?

The controller (idk what it actually is, because OS still reads the battery charge normally) would still decalibrate.
OS sees it correctly, it just turns off at around 45%.
The only way of "recalibrating" it is to remove the battery and discharged Switch's capacitors.
