Hard choice. Both look like arse today, though for slightly different reasons (the jaggies/blur on the N64, to say nothing of its framerate, but the colours were bright vs the muddy dull colours on the PS1 and polygon budget of about 7). In fantasy world if they juiced them as far as any emulator and texture mapping hack has got I would probably pick the PS1 but that is not going to happen for a cheap and cheerful nostalgia cash in. I can't imagine Nintendo could get the best lineup going on (they are obviously going to be down Rare's efforts) and I can see Sony being able to call up far more people to say "how about it?". Going further the N64 does not have many games and while out and out classics might be thinner on the ground on the PS1 there is enough that they could put together something incredibly special through sheer quantity if nothing else where the N64 is good for a long weekend at best. If I am continuing with the real world then N64 emulation is a pain in the arse and Nintendo don't do good emulators. PS1 emulation is far more of a solved issue and most of the time Sony's efforts produce better results. Of course in all this I have a PC so why I would plump for some sub par commercial emulators when I can have all the nice graphics tweaks, ROM hacks, cheats, savestates, good controllers and all that. Similarly most that was any good on the N64 has been remade in better formats over the years. I suppose to end I shall have to spin it again. Dreamcast mini? Frequently some of the best examples of PS1/N64 era multiplats and some hard to come by things of its own.
