So if I delete '_nds', can I use Universal Updater to reinstall, or should I manually install? I confess to not really understanding what are the essential scripts needed from UU.

No offence, but you seem to know less about this stuff than even I do, or at least don't read my posts fully. I know CBHC is cfw. But I wanted Mocha to enable IOSUHAX, thus speeding up transfers from Wii U USB Helper. CBHC on it's own results in slower transfer speeds.
I've been having the same problem with Error Code 105-3015 while trying to install a Hyrule Warriors update. I was on 5.5.3 (patched to 99.99.99).
I've deleted and recreated the update folder and now my Wii U is updating as I type.

I thought I'd deleted mine, but when I went to recreate it, one was already there.
DNS settings were already on Auto.
Trouble is I've just followed the 'restore update folder' procedure, but there's one already there (I was sure I'd deleted it), so now I don't know WTF going on...
System settings update gives an error.
But I think I've realised why. I think I deleted the Update folder, which explains why my DNS settings are default. So if I recreate the update folder it should work...

If I run the system update I get an error. I assumed I had changed the DNS settings to prevent updates, but they're on Auto-obtain.
Do I need to remove CBHC before I can update?
My Wii U has been running CBHC for quite a while now and I've forgotten some of the details regarding system updates etc.
My Wii U system settings say it's running 99.99.99.E.
I've just installed Hyrule Warriors but it won't let me launch the game - it says it needs a System Update before it...
Are you able to elaborate on your second point, because that's exactly the position I'm in - wanting to use Mocha on a CBHC Wii U to speed up ftp transfers?
I've noticed the reference to speed and IOSUHAX in the Wii U USB helper app, and I now understand that Mocha is needed to make use of that feature. Can I just run Mocha on top of CBHC, or do I have to uninstall CBHC? Would I need to do anything else?
I'm running CBHaxchi and Wii U USB Helper, and would prefer to use the direct transfer method because my PC has dodgy USB ports that have corrupted numerous SD cards in the past.
Trying my first direct transfer over wi-fi now, and the transfer speed is fluctuating between 115KB/s and 170 KB/s...
I get this problem (or similar) too.
Last night it installed Xenoblade Chronicles X (19gb) first time, no problem. Tonight, installing Bayonetta (11gb), it's frozen at 67%.
Had the same problem before with other games. Smash took several attempts if iirc.
Just tried that too for confirmation. No better. And, fwiw, that tool doesn't even let me choose the cluster size. It just reports afterwards that it's exFAT, 128kb.

Don't know about cluster size. Think I've tried default and 64kb.
I've just re-formatted to 32kb. Still no apps showing.
After formatting I just made one folder - 'wiiu', and put the 'apps' folder inside it, then put one app inside the app folder.
