Also check "Task Scheduler" and "Services", there are multiple instances of Edge auto-updater and background tasks, you can disable those.
In my case, there are 2x Edge-related services (the naming is sneaky, so you can't search for it! they contain a space and/or dot), and 5x scheduled tasks you have to disable.

You can turn off the "run in the background" option in the settings, it's checked by default for some reason.
After unchecking, you *must* close it from the menu in the top-right corner using the bottom-most "Exit" option, otherwise it still keeps running.
