The GameCube controller via Wii VC at least had physical notches, making it easier.
For Zora, it's swim through one of two or three tunnels and make a breach onto the platform. If you choose the wrong tunnel (it's Left-Right-Middle for the Heart Piece and L-R-Top to complete this segment, and I'm not aware of anything in-game telling you this)

For Goron, you have to be DEAD. STRAIGHT. whilst rolling quickly on narrow platforms and bouncing off chests - not easy to do with an analog stick.
