Are you using Ryujinx? If so, try using Ryujinx custom build. It fixes some major issues in TOTK including save files dated to 1/1/1970.

It is located south of Rito village. When I went there for the first time, there was a Hylian guy standing next to a hot-air balloon. Here's the coordinate. X:-3599 Y:1762 Z:0147

For the demon statue I dont exactly know the trigger for the back entrance opening in the shelter but i would guess its either some time passing or one dungeon completed
