I really like Mahou Shoujo Madoka Magica.
Serial Experiments Lain is up there too.
Mob Psycho 100 and Fullmetal Alchemist Brotherhood as well.

I personally liked, and still like, Bleach. But if I were talking newer anime (2014-2022), I would probably say The Promised Neverland.
