I just want a simple one that does everything I need at minimum.

Also what add on's are suggested?

In addition, these two are good as well:
https://nh-server.github.io/switch-guide/
https://rentry.co/SwitchHackingIsEasy

All of them have something that other one doesn't so I guess it's good to check them all if you have some time to spare.

Also make sure to grab sigpatches and/or sys-patch module (which requires Tesla + nx-ovlloader) because these are required for games to work.
Make sure to set up DNS MITM in order to block Nintendo servers if you ever plan to connect to the Internet (e.g. to use homebrew appstore).
For installing games, I personally use DBI Installer (here's a good video on how to use it), while TinWoo is a decent pick as well.
Some games have amiibo support, so if you're interested in amiibo emulation, there's also emuiibo.

So that is the thing, I have no clue what is the true difference from each other. The guides.

Actually nh-server is outdated, shouldn't be recommended.

Let say this, I use cheats and save file exchange for my bought games, can I be banned?
Modifying save files is generally not a worry in exclusively singleplayer games. However if the game has any kind of online mechanic that is a major risk.

Do you need a SD card reader or is there a way to alter switch SD card data by connecting the switch to a desktop?
