does the speed of the microSD make a difference to how the emulator runs SNES roms or is it just the way the emulator is designed?

It's the way the emulator is designed. It has options to "tune" the game and it doesn't involve the MicroSD in anyway.
The only possible thing would be the paging system for larger games, in which it calls up 1-2 MB chunks of ROM into RAM as it needs it, but I don't think microSD card speed would affect this in any way.
