Hacking Nintendont freezes my Wii U when I press the home button on the gamepad. Help!

For gamepad emulation should I choose "Classic Controller Emulation?" (See screenshot)

Yes, that will allow the GamePad to work perfectly. Keep in mind that the GameCube's triggers were analog, the GamePad's are not. In order to combat this you can hold the L button and then press the ZR/ZL so that it counts as a half press. Also, if you press the minus button, the A/B/X/Y layout will be reversed which can happen pretty easily by accident. Other than that its plug and play!

No, it happens either way. The cause is, again the fact that the GamePad's triggers are not analog.
EDIT: Brainfart, the method still works but now you need to hold ZL so that the L/R can detect a half-press.

Ok I installed. The forwarder with WUP Installer. It launches and I see the Wii logo appear but then I get a black screen and have to unplug to power off. Any ideas?

SD cards have a slider on the left side, if it is down the SD card is locked. Weird that everything else worked tough...
Maybe try to create the injection yourself. You already got the .dol file alongside the assets. Just choose the Wii Homebrew Injection this time.

Click the button and then a small window will pop up. You will need to go to where your Nintendont .dol file is. After doing that, just select the Nintendont boot.dol file.

Ok I chose my nintendont dol file but the Gamepad Emulation section is greyed out when I use the Wii Homebrew Injection option

That's normal. When you choose the option, no GamePad configuration is needed. The GamePad will works as intended as long as the Homebrew app supports the GamePad, which Nintendont does.

Is there a reason "Name to use for Packaged Title" says "N/A?"

For the vWii NAND Title Launcher option I named it nintendont, should I leave this as N/A? (See screenshot)

I just realized I made the VC inject but I specified a copy of "boot.dol" i had on my computer instead of the one located on my sd card. Will that be a problem? Maybe because of the file path?

Nope, since you are making an injection and not a forwarder then it does not matter where the .dol file came from.
