What THEELEMENTKH said, plus, pressing A also works, at least for Mario Kart 8 Deluxe. Kinda funny you're complaining about something you didn't even try.

Don't be so quick to assume. Because you're wrong. With the latest update, it only works SOMETIMES

For Arms, that won't work. For Mario kart, it works only sometimes with the latest update. (Or maybe since I've unlocked the new main screens?)
So far I've not had to press the two digital triggerss with any games that come to mind. It's rather inconvenient to press the triggers just to open the main menu.

Nintendo. Sigh.

Yeah Arms makes you do it, and Mario Kart does too (it might be due to the most recent update, or it might be due to the fact that I destroyed 200cc, and unlocked the new wallpapers) - causing A to not work anymore.

It's probably already been said but I'd assume the reason they shifted to "Press L + R" is because L and R are on every controller setup.
Think about it, if you had a Press A prompt, you'd be SOL if you were just using a left JoyCon for some reason.

I think it is a clever and easy solution to let the game know which controls you are using at the beginning of a game.
Also it is very easy to change controls. For example when you play Mario Kart in Handheld mode and you want to change to table top with the joycons for a two player game, you just have to go back to the title screen and press L+R on one joycon.
