    For Galar version, try to hatch with a ditto. I don't if it will work but it's an idea. For shiny hatch, just Hold R when the owner GIVE you an egg (with shiny code enabled of course) :)

    You have to hold R exacly as for the shiny code. If it's still not working, try to disable all other cheats, reboot your game, and enable just a random encounter cheat. It will (normally) work.
