Is this truly just to test the limits of the switch by inserting it in a situation where it (the Switch)'s software can be used on other Android phones or an iOS device? Despite my frustration, I would like to understand it at a professional and casual level.

1. They don't have a switch
2. They don't wanna lug their switch around
3. Piracy is easier on the phone
4. They enjoy the better battery life
5. They enjoy the better screen (higher refresh rate)
6. They enjoy the easier cheats/save states

Really I can think of more reasons to play on phone than the real switch which is using a chip from 2015 (almost 10 years old)

One, four, five, and six are the only ones I can understand. Two is the sole one that I strongly disagree with, largely because it comes from a fan who doesn't want to Pirate modern technology but prefers to choose anything under the seventh generation of gaming.

I also don't understand the third one
