Firefox (desktop) was a good browser but becomes increasingly invasive as well (hard to keep up with the gazillion of forks promising to be better).
For mobile devices I'm not sure. On GrapheneOS I use the hardened default Chromium based browser Vanadium. Seems to work good.

Everything from big companies with an overly long "Terms of Use" document and a "Privacy (Haha) Policy" that needs a whole book when printed is a big no-no for me.
I've seen that on my mum's phone. Mi Browser. Showed a never ending legal document → adb pm uninstall --user 0 that crap.
