When I was a little child of 7, I was taught that the plural of "woman" is also "woman", not "women". As I grew older, they told me this was an archaic spelling that hadn't been accurate for... centuries, maybe? But fine, I accepted it in stride. But nowadays it seems that the singular is also spelled "women"? I keep seeing that around? And now I'm lost and confused again.

Well according to the dictionary, it's "woman" singular and "women" plural but whatever. The language changes over time.
