There are lost episodes, there is radio, there is the film revival, there is the modern revival and there are various related things as well. Some might delineate by doctor (as a cop out for actors changing they say he regenerates with new appearance and personality after a death).
Most would say skip the film that ultimately led to the modern revival, and the modern stuff might be a good start anyway.

Whether you want to go from some classic point to modern, or start on the modern stuff we could also debate. Probably best to at least not start on the last one as well as by most accounts (and ratings) it was awful. Some might even suggest a much watch list of classic ones (and many were written/made by sci fi legends) in addition to starting from a given point.

TBH, I'd simply stick to starting from the beginning of the modern series if you're new. Watching the classics in 2021 is going to be very hit and miss, with more misses than hits for probably the first three doctors IMO (which is like literally almost 400 episodes). Combined with all the missing episodes, even ones with reconstructions, you're just better off going with modern first.
