Ignoring anything that is better on PC today. Panzer Dragoon Orta, Gun Valkyrie, Ninja Gaiden Black, SSX 3, Blinx, The Warriors and could probably go on for a while with oddities and interesting things. So much has made it to the PC though, even if it was often the best of the console versions.

Yeah I'm working on getting my og console up and running but unsure what to put on the damn thing since 80% of the library is ports now days.

Worse is today bad PC port usually means 30fps lock, no higher res, still controller focused controls but back then PC port could mean whole different game + assets still. See also 007: Nightfire. Not really seen anybody do a "best xbox console exclusive, either entirely or of the big three of the era" either (and with some notable exceptions they if it was between PS2 and xbox then xbox was your choice).

Wind in stuff you can no long easily get on PC (granted sail the seas, open source clone/port or deal with key sellers might be within your wheelhouse), or have no mods really worth speaking of, or maybe you are some flavour of purist ("better graphics is OK, total conversions you can keep" sort of thing) and it gets even more tricky.
