    I have done this procedure several times now, and it works. If you run linux or Mac probably the easiest way. Instead of the last step you can just boot hekate and run the "Migrate EmuMMC" command instead, and it will fix the config for you.

    It sounds like your partitions are not set up right. should be 30GB for EmuMMC and around 200 GB for the FAT partition.

I did need to enter the emuMMC menu in Hekate, and run the "Migrate emuMMC" option, otherwise it would bootloop.     I have used dd on linux as well to copy the emuMMC partition to a new sdcard, if an out of switch solution is required. Partition the new card, then dd the emuMMC partition from the old to new sdcard. Copy the fat32 partition files and you're done. I did need to run the 'Migrate emuMMC' option...

    I don't know about the stock AK2 firmware, but AKAIO trims roms automatically when you copy them. I think you need to enable it in the menu but it works great.
