I googled Fallout Shelter save editor and clicked the first one

they can be edited because they used the same file format as the PC version

I can confirm that you are able to edit the savegames from the switch version on the PC because it uses the same file format as PC.

You can export the save via Checkpoint and edit it on a save editor on PC I have just tried it and it worked
