Hello. I have this Microsoft Component cable for 360 . Is there any adapter so i can use it on other consoles ? I'm thinking of plugging in into an adapter that goes into the Wii connector, or PS2 or Xbox Classic. Does it work like that ?

Here is the pinout for the 360 AV connector
http://www.hardwarebook.info/Xbox_360_A/V

There are active components in there for some of them (mostly the optical spdif audio aspects) but there are also straight through connections.

I am not aware of anybody adapting things for other devices as there is no point really -- most of the expense in custom cables are any custom connectors you need, and I doubt there will be any cheap extension cables to use as a source of female connectors like we do with controller extensions to use in adapters and other such things (though there will probably be a bunch of RROD boards to grab them from if you really wanted to do that).
The only times something gets shared between systems, other than them being common cables, is when a custom connector gets reused (see a lot of older Nintendo stuff), or occasionally back in the PS1 era then you might get a universal cable that has multiple connectors on it for the different devices so that shops could stock one universal cable as a replacement rather than 10 (they might also lie and say it makes life easier to connect multiple devices to 1 TV).
99% of anything involving cables then tends to be people adapting existing cables to do other things -- even on basic 360 cables you probably still had all the pins there so if you could solder onto those then you could use them to make custom cables to suit your needs or use pins on it that were not officially used in anything but never the less accepted or output a signal.

The female connector is Xbox 360 in this case, and the male connector is either Wii, PS2 or Xbox Classic , or all . I've looked around the net and didn't find anything . Guess there wasn't enough interest . What i did find is component cables that have all connectors at one end . I used to have one but the red color just stopped working .

I really can't say I have met this desire before. Seen plenty of people adapt things, or take complicated internal video signals and output them for higher qualities than baseline consoles with official outputs might afford (see stuff like the N64 RGB mods https://www.retrorgb.com/n64rgbmod.html ).
I suppose if you had the official stuff then it was often pretty good quality as far as shielding when compared to the vast majority of third party efforts so could be worth cannibalising but then again there are probably a million very nice shielded cables out there for next to nothing, especially now everybody has gone HDMI and nobody wants old SCART cables or whatever.
In theory you could take a female connector and wire it through to equivalent male connectors (or a bunch of them) for most of those other consoles as they were all often pretty analogue in the end, however if you are concerned about video quality then there are far better alternatives you probably want to be considering.

On the original xbox do note if you have a PAL box you might wan to homebrew it and look up enigmah video switcher to allow it to output nicer signals.
https://pinouts.ru/Game/playstation_vga_cable_pinout.shtml http://www.hardwarebook.info/Category:Home_AV has pinouts you could use to make adapters or wire things up, however you are still lumped with finding male connectors, or maybe taking wires out of the original consoles instead (and at that point I would be looking into the fancy video outputs mentioned above)
