Hacking PS3 Newbie

I have a PS3 3.41 Original FW. I have the 'PS Jailbreak' Dongle thingy silver color. I want to know what can I do with it or how to update it. I want to only play "back up" games on this thing and I have another one that I use for PSN.

I have a ps3 with the latest original update but i wanted to ask if everything i have in my ps3 will they still work after i install the CFW?
Game updates saves etc..What i really want to do is to play emulators on PS3 Snesx and Gba

So my solution is to use CFW? Online play is disabled?Are there alternate ways to play on ps3 without CFWing it?
Like Fmcboot on ps2 but with a USB stick?i know im asking much :s

Edit: Is the firm ware different from the update?I mean i have 4.11 that means i have CFW 4.11?
