A while back I got a slim PS2 from a family member. How do I check if it's modchipped? (Opening it will be a last resort)

See if you can get into some sort of configuration menu by holding down a button combination whilst powering on the console. For example, Matrix Infinity's menu combination is Triangle+Circle, whereas DMS3 and clones is simply Triangle. Just try each and every one of them to see if it works.

As a last resort, I suggest opening up the console.

Judging by the flash and config versions, it looks to me that you have a clone DMS4 such as Mars Pro or M-7, meaning its not upgradable via the ToxicOS CD. You cannot save the settings either but it will run all of your imports, backups and originals.

The clones will have a boot sequence required to play PS1 or DVD movies, so bear that in mind.

Boot sequence for PS1 games or DVD movies:
- Press Eject and insert a PS1 game or DVD movie.
- Press Eject again to withdraw the disc tray.
- Press Power twice.

So for PS2 games (no matter if they are burned or anything) I boot like any other game, but for DVD's and PS1 games I have to press power twice? Also, does the game HAVE to be in the drive when booting no matter the disk?

PS2 games do not have a boot sequence, so you can boot them normally. For PS1 and DVD movies/films, it requires pressing Power twice to switch modes.
