Apple My iPhone 5 is still on IOS 6, want to finally update it

I've been holding out for years cause I hated the new look of IOS 7 and I've held out as long as I could and now a shit ton of apps can no longer be updated and newer apps cant be downloaded unless I'm on IOS 7 or later. So I have a few questions to ask before I decide to do anything here.

1. Is there anyway I can roll back to my current firmware if I decide I dont like it?

2. I have a ton of Jailbreak crap on my phone, anyway to back all that up so I dont have to reinstall and reconfigure everything once I'm on a newer firmware?

3. Whats the latest most exploitable firmware for jailbreaking?

P.S. My only motivation for finally wanting to update after all these years is because of Miitomo, *sigh* Nintendo.

1. You could save the SHSH blobs for it but I have no guarantee that it'll work

2. No way to back up your jailbreak stuff AFAIK

3. According to redmondpie, latest jailbreakable iOS version is 9.1 but I'm pretty sure Apple stopped signing those IPSW

Are you sure theres no way to save the jailbreak stuff? I remember something in the corner of my mind from years ago there was some sort of vault app, it backed up all the jailbreak contents and stored it as a seperate file on your PC and after you did the update and rejailbroke you use the app and apply that backup to get everything back.

If that rings a bell please let me know what that was.

I'm gonna take a crack at this tomorrow morning when I have a sharper state of mind to work with.
