Where can I find working Rom sets for MAMEWii?
Or for RetroArch's MAME2000 core?

A more direct question: Which romset works for Wii?

It's written on the Wiibrew page :
Downgraded to MAME 0.134u4 due to issues with some ROMs not working

MAME Wii has rather low performance and compatibility compared with Retroarch FBA/MAME. One big advantage though is light gun support.

MAME 2000 : 0.37b5
MAME 2003 : 0.78
