The stuff my wife and I used to play (before my son was born):
Combat Training mode on CoD:Black Ops pretty religiously (she's not a "gamer" but handled herself well against the bots)
Bubble Bobble Neo
Bejeweled Blitz
Borderlands (she enjoyed shooting things a lot more than she thought she would...)
Gears of War 1
UFC Undisputed (she enjoyed pummeling someone unconscious a lot more than she thought she would...)
Do you like to have racing games because that will bring more excitement.

I played quite a few games with my gf. We both really enjoyed:
Borderlands
Castle Crashers
Halo
Gears of War 2 & 3
Fable 3 (One of her personal favorites)
Fairytale Fights
Fear 3
Call of Duty MW3 Survival

The game we enjoyed the most was a surprising title from Bethesda called Hunted. Its a game that focuses on co-op with the two main characters a male and female and has really good graphics with a pretty decent story.
