I think because it is so open-saucy that it is easy for people to understand how it works, rather than be images which you can't decrypt and look at and understand what they're doing. And being all open-source you could modify it as needed to get it to run (remove all the bits that are incompatible).Question from a total noob about console hacking :

thxLikely because it's open source and the license only requires you to also release the source code for any modifications.
Other OSs like Windows or Mac OS can lack source code and have licensing restrictions.
They may also have a preference for it e.g. familiarity, 'ethics' (no need to patch the OS other than executing Linux), prefer running Linux over 'game OS' for full control, etc.
It may also be just because it's expected, as they say 'Linux is inevitable'.
