`I want to upgrade my HDD and I don`t quite remember what version i installed (DEX, CEX, PEX)
After installing the new drive can i just choose any of them? (PEX is probably the one I want to go for). Or should I download a version and install on the new and old drive?

I did find a solution. Probably not the quickliest way but it did work.
I tried having both the ofw and cfw on usb stick (on seperate occasions) after swaping the hdd. The ps3 booted into safety mode and could not find any firmware on the stick.

Then I connected the old and the new drive into Linux and used the dd command and cloned the old drive. After this the ps3 booted into evilnat but I had to format the new drive. So to get my old games and savefiles I had to export the old drive to third drive and import that into the new drive. Took some serious time, but than again that is what I really remember for playing ps3 back in the days. Lots of waiting and updates
