So I have the iso with the PS3_GAME and sub-folders and stuff included. I am wondering how would I be able to locate text files and if I do how would I go about modifying them so I can translate them into english? Sorry if this seems like a noob question i'm pretty new at this.

You're aware that Persona 5 releases in English on February 14, 2017, no? it'd be this time next year before you finished translating it, so better off just waiting.
