There are many ways to do this such as:
1)Waninkoko's dvd dump tool
2)Having a pc with a drive capable of reading wii discs and using a application like wiibackupmanager
3)dumping with usbloaders such as usbloader gx
4)dumping via network.

Games are usually less than 4GB, many even just 1GB or less. Only a few like Smash are bigger...

USBLoader GX has this function built in just press + and it copy´s it to the HDD and ready to play.

Can I select a place to send the copy to (like can it dump to an external instead of an SD?)
Hmm... to be honest I'm not sure if any games need the newest firmware. You could just proceed and update when you run into this situation.
