It's probably going to depend on the game. Some will be encrypted, some will have checksums and hashes, and others will just let you edit them.

I actually used HxD to edit my gold on Skyrim using the old barrel method. So yes some games you can.

Most games will work. Some that are encrypted won’t like Splatoon 2 (tho there is a Splatoon 2 save editor)

EDIT: Have followed a few different guides but I either cant load the save after or the gold is the same value before the edit

Tried to edit save for arms on HxD but it seems to be encrypted as edited save inject just gets cleared not sure what I can do to decrypt the save so the game doesn't clear the save file

I did some messing around with my Skyrim save and was able to edit gold via the barrel method.
