I recently bought Doom 2 for windows 95 on the disc, and copied the files from the disc to my sd card. Whenever i try to run the game the resolution is screwed up and it's all in black and white. Is there some way to fix this?

Are you sure they were removed? I have a disk copy that looks pretty old, and there's definetly a folder on the disc called "DirectX"Doom 2 by itself wouldn't even run properly on Windows 7, let alone 11. It requires DLLs from DirectX that were removed years ago.
Your best option would be using one of the source ports, like Chocolate Doom or ZDoom, to play Doom 2 instead of trying to get the original to work.
Freedos works as wellOr, for added lovely, use DOSBox.
Can't get more old school than that.
Or use VirtualBox and load up windows 95 like a crazed lunatic maniac.
Use a modern source port like GZDoom. Similarly for Build Engine games, use Raze.I recently bought Doom 2 for windows 95 on the disc, and copied the files from the disc to my sd card.
